Aligning Food Systems Policies to Advance Public Health

July 1, 2009 | Journal Article

Principles for Framing a Healthy Food System

July 1, 2009 | Journal Article

A healthy food system is one in which everyone has daily access to a diet that allows for a full life, that does not deplete natural resources and allows for a sustainable livelihood by those involved with all aspects of food production. The author suggests seven principles that could be used in moving the United States toward a markedly improved food system.

Today's Food System

July 1, 2009 | Journal Article

The existing food system offers too much cheap food to consumers who opt for foods high in calories, fats, sweeteners and carbohydrates over more expensive fresh produce. Current production policies and market distortions need to be corrected. Future policies should integrate health and sustainability concerns.

Food Systems and Public Health Disparities

July 1, 2009 | Journal Article

The authors use a new conceptual model to illustrate the complex dynamic and multifaceted relationships between food systems and health disparities. Additionally, the authors identify specific areas for further research on how food system interventions can address and reduce health disparities.

Reshaping the Food System for Ecological Public Health

July 1, 2009 | Journal Article

Food policies created in the mid 20th century to deal with undersupply are ill suited to address today's challenges of over, under and mal-consumption and the gross inequalities that exist within and between nations. The ecological public health approach proposed in this article could help provide vision for 21st century policy on food systems.

US-Based Food and Agricultural Value Chains and Their Relevance to Healthy Diets

July 1, 2009 | Journal Article

A Global Value Chain (GVC) analysis examines the structure of food production and consumption systems and identifies leverage points that can bring change at a structural level. This article applies the GVC framework to two food value chains—chicken and tomatoes—to gain insights into the contemporary dynamics of food supply chains and their implications for healthy diets.
